quick and easy coffee cake


coffee cake is like if a cinnamon roll got turned into a cake. it doesn't have any coffee in it, but you probably already knew that. serves 4.

INGREDIENTS:

batter:

  • 55g (½ stick) butter, softened
  • 160g (¾ cup) sugar
  • 1 egg
  • 120g (1 cup) flour
  • 4g (1tsp) baking powder
  • 1.5g (¼tsp) salt
  • 100ml (a little less than ½ cup) milk

topping:

  • 55g (½ stick) butter, melted
  • 30g (¼ cup) flour
  • 105g (½ cup) brown sugar
  • 8g (1tbsp) cinnamon

DIRECTIONS:

  1. for the batter: in a large bowl, thorougly mix the butter, sugar, and egg.
  2. combine the flour, baking powder, and salt. add the dry ingredients and milk to the bowl and mix until combined.
  3. for the topping: in a separate bowl, combine the butter, flour, brown sugar, and cinnamon into a crumbly paste.
  4. into a greased loaf pan, spread the batter evenly, and then crumble the topping on top.
  5. bake at 350°F/175°C for 40 minutes, or until the cake is no longer jiggly.

let it cool a bit before serving if you'd like good, sturdy slices, or eat it hot and fresh if you just can't wait.
